Melt butter, a bit of olive oil and a spritz of kosher salt and pepper. Sometimes i also season it with some basil too.
Once it is hot.... Add tortilla and rub around the tortilla and flip over and rub some more. Remove quickly when lightly browned.
Make sure you have enough olive oil and then add your eggs and toppings.
Fill tortilla with your sautéed toppings and add shredded cheese. Roll up the tortilla and serve
Notes.. Calphalon pans well greased with olive oil and that are hot before the eggs are added will not stick.
Also... I cook my bacon for 4 minutes on broiler on top oven rack using broil setting. Then keep a pound premade in fridge for recipes.
- Kosher salt and black pepper for taste
- 3.0Tbsp Olive oil
- 1.0 flour tortilla
- 2.0 Eggs
- Toppings.... Green onions, bacon, sausage
- Toppings... Mushrooms,
- 5.0Tbsp Shredded cheese
