Mash your banana in a bowl using a fork and mix in the eggs until both ingredients are fully combined and the bananas are as lump-free as possible.
Mix in your oats and peanut butter. The peanut butter is optional, but I like the crunch it adds! Sometimes add protein power too, and you can't go wrong with some chocolate chips!
Spray a touch of oil into a pan and cook the pancakes for 20-30 seconds on each side. The secret is to cook them small, as they're difficult to flip!
Put some blueberries Ito a bowl with a teaspoon of water and microwave for 20 seconds before drizzling on top of your warm pancakes.
