Ok! Now go raid your fridge looks for things u wanna turn into cookies. See? I have from normal choco chip, PB, raisins, nuts, even fried shallots!! U can use almost everything.
As i said 1cup butter is around 230g so skip the headache and use the whole pack (227g) cube it up to save your bicep some beating. Yes! You can beat it by hand.
If you like white colour shortbread. Goes with the recipe given. If u like them brown like i do replace 1/4 cup of icing sugar with brown sugar
Add salt just a pinch if u use unsalted butter
Whip them together till fluffy
Add flour. I use gluten free
Separate into 4 parts. 1st part add the fried shallots with its oil. If too soggy add some flour until hold. Preheat oven to 180c
U can see shallot bits in there.
Spray ur tray with pam or butter
Use fork to make pattern on the cookies.
Add some shallots on top. Bake all the cookies around 15-18 mins or until golden.
2nd part add some peanut butter. With each table spoon added add equal amount of flour to the mixture.
Make it into shapes. This one should be a bit darker in colour when baked from the colour of the PB
3rd part add raisin
Last batch i mix with chocolate chips and add butter scotch syrup in the centre.
Shape them differently so u know which is what.
As each batch comes out the oven put the cookie out to cool on rack

- 3/4c Flour
- 1.0c Butter (salted)
- 3/4c Icing sugar
