Sauté one organic corn tortilla in salsa verde. Any salsa will do as long as there are no preservatives or added sugar in it. This counts as 1/2 of a Yellow starch container
Chop a handful of romaine hearts, four tomato slices and 2 slices of red onion. This counts as one Green vegetable container
Fry 2 eggs in a nonstick egg pan to desired doneness. Use a lid so you don't have to flip. Salt and pepper.
Sauté your onion slices or use raw! Slice avocado (1/8 - 1/4 avocado depending on the size) this counts as one blue healthy fat container. Measure if you need to. You don't want to over do your fat!
Plate your Huevos. Layer: lettuce, sautéed tortilla, tomato slices, eggs, onion and avocado. ENJOY!!!
