Gather your supplies
First add 1 oz. Osmanthus-infused Fino Sherry (add 2 Tbspdried osmanthus flowers to 500ml Fino Sherry. Stir and let sit 1 hour. Strain, bottle, seal and refrigerate)
Next use .25oz rosemary honey (2 cups honey, 1 cup water. Heat with 2 rosemary sprigs until it simmers. Immediately take off heat, strain, chill)
Add .5 oz. Yellow Chartreuse
And 1.5oz Broker's Gin and egg whites
Shake without ice to emulsify egg whites. Then add 1 cup ice and shake again to chill and dilute. Double strain into a chilled coupe glass.
Garnish with a pinch of fennel pollen to add a hint of savory flavor.
