Wash your veggie in water to clean it.
Hold the veggie with your non-knife-wielding hand using the claw grip technique.
Cut the veggie lengthwise into strips 1/16 of an inch
Stack the strips and cut the strips into 1/16 of an inch one more time.
Now you are ready to eat! You can eat the veggies raw or cook them with a little oil on a pan for a minute or so. They look very good for presentation and are yummy when mixed with other foods.
