Wash the tomatoes with a damp cloth, removing any dirt
Put water on to boil. Stainless bowl with ice water is for shocking tomatoes after boiling.
Squeeze lemons. 1tbl juice per 500ml jar. (Later)
We boiled lids just in case. But just washed the jars.
Rinsed and washed.
Boiling for 30 seconds or so.
Drop in ice bath before peeling.
Score and peel
Fill jars, push out air. Add 1tbls lemon juice per jar.
Clean inside and outside top of jar with clean paper towel
Ready to seal.
Sealed with sterilized lids.
Boiling stars. Note towel in bottom to avoid too much rattling.
We boiled for 40+ minutes just to be sure.
I added water occasionally to ensure that the jars remained covered.
Voila! Finished products! We did not strain or remove seeds and membranes of the tomatoes. So there is a bit of water on the bottom.
Labeled! (Wide mouth jars were easier to fill).
Packed and ready for home. All seals tight and slightly concave.
