Gather your ingredients. Preheat oven to 375 degrees F.
Coat a muffin tin with nonstick spray. Set aside.
In a large bowl, add sugar.
Add melted butter.
In another large bowl, mix together flour and cornmeal.
Add baking soda.
Mix dry ingredients and wet ingredients until combined. Try not to overmix.
Seed and dice two jalapeños.
Thinly slice a third to top your muffins.
Add jalapeños and cheese to your mixture.
Scoop the batter into your muffin tray and top your muffins with a slice of jalapeños.
Bake for 15-17 minutes and drizzle with honey.
Let cool and enjoy!
