Ingredients for Italian Tortellini & Spinach Soup
1 box 32 oz Chicken Broth
Open 2 can Garbanzo Beans & 1 can Garlic & Onion diced tomatoes
Rinse garbanzo beans in strainer under cold water.
On cutting mat, chop 2 stalks of celery
Now peel 2 carrots
Chop both carrots
Press 4 cloves garlic. Love garlic, add extra !
Peel 1 yellow onion. Do so by cutting off each end of onion & slice down the middle. Peel back outer skin.
Now chop onion. I love using The Pampered Chef Food Chopper. Fast, easy & tearless!
Now add the trio veggies to the Deep Covered Baker.
Add 1 tsp cooking oil to veggies. Mix with spatula until coated.
Cover baker & place in Microwave. Cook 5 minutes on High.
Remaining ingredients on deck to be added to the baker.
Veggies are now tender!
Time to add the seasonings. 1 Tbsp Italian Seasoning. I love our Pampered Chef seasonings. Now add Salt & Pepper to taste as well.
See all those seasonings? Yum! Now add you pressed garlic.
Mix until well blended.
Now add you can of diced tomatoes.
As you can see, I forgot to take pic of adding garbanzo beans to the baker. But do that now!
Now add chicken broth.
1 pkg Tortellini,
All well blended & ready for the microwave again.
13 minutes in microwave on High
Ahh, while we wait .. Nice glass of wine. I love Moscato!
Out of microwave ! Time for the last step...
Add 1 bag of baby spinach. You may have to do 1/2 the bag at a time. Then mix and than add the remaining of the bag. Like less spinach, only add half the bag.
Cover & let sit. The heat from the soup will wilt the spinach. To speed process you can put in micro for another few minutes.
Finished & ready to serve. Some fresh grated Parmesan Cheese is nice on top of each serving.
