All the ingredients you will need.
Step 1: Melt butter gently and allow to cool.
Step 2: Place vinegar, pepper and water into a small saucepan and reduce to 1 Tbsp of liquid.

Step 3: Put the liquid into a small bowl which sits comfortably over a small saucepan, half-filled with hot water.
Step 4: Add the 3 egg yolks and mix over a moderate heat until thick and foamy.
Step 5: Whisk in butter, a little at a time still over heat. You should be left with a creamy, pale yellow sauce.
Add the lemon juice and whisk to combine.
Step 1: Half fill a large pot with water and add a splash of vinegar and a pinch of salt. Bring it to the boil.
Step 2: Reduce the heat and crack eggs into the pot of water, one at a time.
Step 3: Cook eggs for 2 minutes on low heat and remove with slotted spoon onto kitchen paper.
Toast 2 English muffins.
Add slices of ham to the muffins.
Gently place the eggs on top.
Now the best part! Spoon on as much sauce as you desire!
Garnish with parsley, salt and pepper...
