I use a piece of foil to keep the ground beef going in the bowl and not on me.

Chop your meat into small pieces. This is a mixture of filet and ribeye

I like the meat frozen just enough you can cut through it

Turn on mixer to a speed you are comfortable with I start at 2-3 and might push it to 5-6

Push in the meat chunks out comes ground beef

I transferred to a smaller bowl and wrapped it with plastic I will let it rest for an hour or more
