Pick a large eggplant

And a large cougette ( or 2 small ones )

Peel it in fashion

Cut it in 1/2cm thick slices

Repeat with the cougette

Salt both sides and leave it in the fridge for 1/2-1h

Remove the salt and dry (use paper towels) the slices, rinse them with olive oil and start grilling them

Grill for about 4 minutes on each side

And another 4 minutes on each side. Get creative on the fry pattern ;)
