Gather your ingredients. I chose to make cream from scratch, but you can use whipped cream from a can.
Cut your apricots in half and remove the seed.
Mix together the honey, lemon, oil, salt, pepper, and cayenne if you used it. Put the apricots in a medium bowl and coat it with this sauce.
Lightly spray a skillet with ridges. (This is good for "grilling" in the winter. But if its a nice day, go ahead and grill outside to get grill marks.
While it heats up make your whipped cream.
Place apricots flesh side down for 3-4 minutes if on a skillet, 1-2 minutes if on a grill. Remove them from heat skin side down.
Don't throw away the carmelized sauce! It smells like joy and makes a great drizzle.
Put it in a small bow.
I was taking these to a party, so I put them in the package the apricots came in for easy transport, but that's optional.
Spoon a dollop of cream on, sprinkle some nuts on, and drizzle with sauce.
- 6.0 Apricots
- 1.0c Whipped cream
- 1/4c Almonds, crushed
- 1/4c Honey
- 2.0tsp Lemon Juice
- 2.0tsp Olive oil
- 1/8tsp Salt
- 1/8tsp Pepper
- Dash of Cayenne pepper (optional)
