First thing is your zucchini preparationâž¡
Give them a good clean !!! Make sure the water is hot & take off any dirty. I wash it with soap & hot waterâž¡
Get your double boilerâž¡
Fill the boiler with water, less than half. After filling the water in the pot start heating up the water to a boil. While waiting for the water heat up lets get the zucchini cut upâž¡
Slice the end completely off. Now slice down the middle evenly âž¡
Once the water is to a boil line up your zucchini in the double boiler like this. Make sure to cover the boiler with a top. Boil until the zucchini's middle is softâž¡

Let them cool down first then use a napkin to get the ride of the access water. Be carful it may be hot âž¡

You could purchase this at any Mexican store. This is the best cheese to use Cotijaâž¡
Get your cheese & dry zucchini & stuff the cheese in the zucchiniâž¡
Pat in the cheese gentlyâž¡
Ok once your done with this we now need to make an egg mixture, but first âž¡
Start heating up your oil in a frying pan .. Not too hot but a medium high.âž¡
Get your eggs cracked in a nice large bowl âž¡
Little bit of salt... Not too much the cheese is salty tooâž¡
Pepper âž¡
Now mix salt, pepper & eggsâž¡
It should look like thisâž¡
Now get the stuffed zucchini & egg mixture. Make sure oil is hot âž¡
Place Zucchini in egg mixture like this. âž¡
Now pour mixture over the top of zucchini âž¡
Once oil is hot pick up zucchini out of egg mixture & drop it face down for 2-3 min or until golden brown (depending on high you have the pilot) âž¡
Make sure to fry both sides & make sure cheese is golden Brown before you flip it âž¡
Make sure tops are golden brownâž¡
Don't burn you 👅! Best when hot !!!
