INGREDIENTS
As much spinach as you wish, 1 or 2 eggs (or 3 if you wish), and any type and amount of milk - very flexible. I used 2 big bags of spinach, 2 eggs, and 1/2 cup milk.
Fill a large (pasta) pot 1/2 full of water. Turn on high, we want it to boil. No need to wait for the boil...
Add spinach, and shove it into the water. Get it submerged.
Cover it if you wish to speed up boiling.
Stir on occasion to keep it submerged and mixed around...
Once it starts to boil, keep stirring. Boil for anywhere between 5 and 10 minutes. Flexible, you can't go or do it wrong.
Here it is at full boil...
Turn off stove. Pour out water. No need to get all the water. Flexible.
Add eggs and milk, turn on stove to medium. We want to get it boiling again.
Break the eggs and start stirring to help cook the eggs and mix the eggs and the milk throughout the spinach.
We see it starting to boil again, keep mixing to help the eggs cook.
It takes minutes tops to get the eggs cooked to your satisfaction.
Time to eat while it is warm. Refrigerate the rest to microwave later.
