Paleo is what is on the ingredient list in this guide. It is closer to the way our ancestors ate 10,000+ years ago.

It generally excludes dairy, starches, grains, legumes, sugar, and alcohol. In the last 10,000 years, we have not evolved to handle the toxins. Peanuts are a legume.

Paleolithic ancestors ate what they could hunt, gather and pluck. Not likely that they ground almonds into flour for baking cookies, cakes, pizza and bread.

We tend to take the basic ingredients and use a poetic license to create the dishes we grew up enjoying.

The incidence of diabetes, hypertension, heart disease, Alzheimer's, MS, cancer & more nuisances of the modern standard American diet (SAD) have increased exponentially as we ate more processed food.

This is an example of a paleo food pyramid. You don't see the cookies, cakes, pancakes, ice cream and biscotti that I make from the "approved" ingredients.
