Roll out the top and bottom crusts and set aside.
Cut sausage into 1 inch pieces.
Heat skillet to medium heat and cook sausage until brown.
Add sausage to a large bowl, and add cheese, eggs, and parsley. Mix together and season with salt and pepper.
Add one raw egg to mixture and mix to a good consistency.
Spoon filling into pastry lined pan.
Cover with pastry top and seal edges. Cut vents in top for steam.
Bake in oven for 35 minutes until golden brown.

- 3/4c whole milk ricotta cheese
- 1/4part fresh parsley
