I figured this out while putting up a used baby crib for the umpteenth time. The hex screws weren't turning anymore, but replacement wasn't available in the local hardware store. Here is how to fix it

As you can see this was a hex bolt once, but the six inner edges are round now

The easy solution: Hit it with a hammer!

Do it on a flat metal surface like this anvil

Hit the same side until the bolt fits your open-end jaw spanner. Watch the video to see how easy this works

You'll end up with your hex bolt looking like this
