How to do a restaurant trick

Three people went out to dinner. The bill came up to $30, so they paid $10 each.

The waitress happily took the $30

When the owner realised they paid $5 extra so he gave the waitress $5 back to give to the three people

The waitress finds out that $5 can't be shared evenly between them, so she keeps $2 for herself and gives them $1 back to each of them

Altogether the people paid $9 each. If you add that up it equals $27. If you also add the $2 the waitress kept then it still only adds up to $29. Where is the missing dollar?
