Thinly slice fennel bulbs
Peel and slice the apples
Use prepared horseradish
Spread out on silpat mats on a sheet tray
Place into Alto-Shaam combi oven
Push the dehydrate button and set the temp to 145F (63C), continuous run. Do this overnight to save time and free up the oven during the day.
How it will look after drying all night
Grind up the horseradish. This can be used to season short ribs.
Apple chip garnish. Tip: before dehydrating, dip apple slices in simple syrup.
