Wash and cut cucumbers, tomatoes and pepper into similar size bite size chunks. Mix veggies together in a ceramic bowl, cover.

Greek Vinaigrette Dressing 3:1 ratio of extra virgin olive oil to freshly squeezed lemon juice (discard pits). Add finely minced garlic, fresh chopped oregano dash salt and fresh ground pepper to jar

When ready to eat add Feta, shake and add dressing and enjoy!

  • 1 English hothouse cucumber
  • 2 Kirby/Liberty or cucumbers (without wax on them)
  • 3 ripe but firm vine tomatoes
  • 1 bell pepper red green or both
  • 1/2 thinly sliced red onion
  • A handful of pitted Kalamata olives
  • Crumbled Feta cheese
  • extra virgin olive oil
  • Fresh squeezed lemon juice
  • 1 garlic clove finely minced
  • Chopped fresh oregano
  • Dash of salt
  • Fresh ground black pepper
