INGREDIENTS
Pre-heat oven to gas mark 7 and then Clean your chicken thighs with cold water and lemon π (hate the feel of raw meat lol)
Dice your onion and garlic, chop your tomatoes in half and slice your scotch bonnet pepper π
Add one tablespoon of salt π
Now add one and a half tablespoons of mixed herb seasoning π¬
Now add one and a half tablespoons of Caribbean everyday seasoning π
Then add two tablespoons of hot pepper sauceπ±
Then a quick splash of olive oil π
Then add all the ingredients you previously chopped up π
Mix together and place everything in a oven tray (for more depth of flavour season and then leave in the fridge overnight)ππ
Once the chicken is in the tray smother them in as much nandos sauce as u like I used about 4/5 tablespoons, make sure all the thighs are covered ππ put in the oven for 30 mins x
After 30 mins flip all the thighs over and put back in the oven for a further 30 mins π₯π₯
Meanwhile wash your potatoes and keep you're olive oil and salt out π
Turn the kettle on and chop up the potatoes. I leave the skin on because it's yummy but you don't have to ππ
Boil the potatoes for around 20 mins until there nice and soft... I did it in the rice cooker but u can use a potπ
place in another oven tray add a little bit of salt and a nice dose of olive oil so they get really crispy. Then put in the oven for 15 mins the chicken and potato should finish at the same time ππ
While everything's in the oven you can make a quick salad like me :) or you can steam some veg it's really up to you!!!! πΊπΈπΊπΈ
When potatoes are brown (approx 15 mins later) plate up and enjoy π»π»ππβΊβΊ

- One large onion
- 3 cloves of garlic
- 6 cherry tomatoes
- One scotch bonnet pepper
- Mixed herb seasoning
- Carribbean everyday seasoning
- Hot pepper sauce
- NANDOS medium marinade
- Olive oil
- 4 large white potatoes
- Salt
