INGREDIENTS

Pre-heat oven to gas mark 7 and then Clean your chicken thighs with cold water and lemon 😖 (hate the feel of raw meat lol)

Dice your onion and garlic, chop your tomatoes in half and slice your scotch bonnet pepper 😜

Add one tablespoon of salt 😏

Now add one and a half tablespoons of mixed herb seasoning 😬

Now add one and a half tablespoons of Caribbean everyday seasoning 🌞

Then add two tablespoons of hot pepper sauce😱

Then a quick splash of olive oil 😋

Then add all the ingredients you previously chopped up 😎

Mix together and place everything in a oven tray (for more depth of flavour season and then leave in the fridge overnight)😛😛

Once the chicken is in the tray smother them in as much nandos sauce as u like I used about 4/5 tablespoons, make sure all the thighs are covered 😍😍 put in the oven for 30 mins x

After 30 mins flip all the thighs over and put back in the oven for a further 30 mins 🐥🐥

Meanwhile wash your potatoes and keep you're olive oil and salt out 😀

Turn the kettle on and chop up the potatoes. I leave the skin on because it's yummy but you don't have to 😉😉

Boil the potatoes for around 20 mins until there nice and soft... I did it in the rice cooker but u can use a pot😌

place in another oven tray add a little bit of salt and a nice dose of olive oil so they get really crispy. Then put in the oven for 15 mins the chicken and potato should finish at the same time 🕓🕓

While everything's in the oven you can make a quick salad like me :) or you can steam some veg it's really up to you!!!! 😺😸😺😸

When potatoes are brown (approx 15 mins later) plate up and enjoy 😻😻😝😝☺☺
- 5 chicken thighs
- One lemon
- One large onion
- 3 cloves of garlic
- 6 cherry tomatoes
- One scotch bonnet pepper
- Mixed herb seasoning
- Carribbean everyday seasoning
- Hot pepper sauce
- NANDOS medium marinade
- Olive oil
- 4 large white potatoes
- Salt
