Get the fish of your choice, gut it and clean the inside but do not scale the fish, it is important to leave the scales on.
Make a mixture using rough kosher sea salt. I've used just over 1kg of salt. Crack in two whole eggs. You can use the egg whites, whisk until peaks form then add into salt. I used the egg with yolks.
Bake fish in a pre heated oven. I baked this fish on 180 deg/cel for 25 minutes. Remove from oven and crack the crust and lift off the flesh inside.
The aroma is mouth watering!
Finally, with little effort you have the perfect fish. Serve with a green salad and home made aioli. Enjoy!
