Start by removing the hulls of your mushrooms and placing up-side down in a prepared baking dish.
Chop up the stems of the mushrooms, squash.
Here I am dicing the onion
Combine chopped vegetables, salt and pepper to taste and a wee bit of cooking oil. This is your stuffing. You may want to add almond meal at this point to make it more "stuffing-like".
I didn't snap a picture, but add your cooked ground turkey meat into your stuffing, then stuff each mushroom cap so they are JUST over-full.
Pop in the oven at 375 degrees for about 25-30 minutes
These are the mushrooms right out of the oven. They're best when served a little rested.
Final result with some Trader Joe's balsamic vinaigrette dressing! Super yum!
