I like to shop at health food stores like Whole Foods or Trader Joe's. I found the pancake batter at whole foods.
I begin with slicing the bananas
Take a handful of almonds. This gives the pancakes a nice nutty hearty flavor. And almonds are great for you!
Take a knife and place over an almond
With the palm of your hand press down to crush the almond. *please be careful*
And smushed almond :)
I like to chop up a little bit more fine.
Mix one cup of pancake mix with 3/4 cup of soy milk, two tablespoons of oil and about 1/2 cup of oatmeal. Add chopped almonds
Sprinkle some cinnamon. More or less to your taste
Spray pan with canola oil. Keep at medium heat
Batter should be slightly creamy. Add more soy milk if it is too thick.
Have your bananas and blueberries handy for making the pancakes.
Place 3-4 spoonfuls of batter into pan
Spread around to make a nice round shape
I start with bananas and press down into batter...
And I make a pattern as such... You can be random or whatever you are in the mood for ...
I like to place a bigger blueberry in the middle. Press down into batter...
And I do this kind of pattern for the pancakes.
When edges are somewhat brown, you can flip over the pancake
You won't see the design on the other side most of the time. Pressing down on the fruit just prevents it from flying out of the pancake when flipping over. May take some practice.
This is the batter I love to use. It tastes great and completely gluten and dairy free.
Make sure to look for the little "V" for vegan!
If you have left over bananas, do NOT throw them away... You can make a nice topping for those yummy pancakes you just made
Add a Table spoon of EarthBalence spread and plop the bananas in the pan on low heat
Add a little agave syrup to the pan. Sauté the bananas for a few minutes or until golden brown. They taste like candy!
And there you have it! Top if off with some 100% organic maple syrup.
- Gluten/dairy free pancake mix
- Almonds
- Oatmeal (dry)
- Soy milk
- Cinnamon
- Vegetable oil
- Canola oil spray
- Blueberries
- Bananas x2
- Agave syrup
- Earth balance butter
