Preheat oven to 350. Bake potatoes in oven for 1 hour. You could just microwave the potatoes instead to save time. About 3 minutes per potato. Poke holes in potatoes with a fork so they don't explode.

Cook bacon, crumble, and set aside. When potatoes are done let them cool for 10 min. Slice potato in half lengthwise and scoop out flesh into large bowl leaving about 1/4 inch of flesh to keep shape.

To potato flesh add sour cream, butter, salt, pepper, 1/2 cup cheese, 1/2 the green onions, and milk (add more if 1/4 isn't enough depending on consistency you want). Mix with hand mixer until creamy.

Spoon the mixture into the potato skins. Top each with remaining cheese, green onions, and bacon. Bake for another 15 minutes at 350. Enjoy!!! :)

  • 4.0 Large baking potatoes
  • 8.0 Slices of bacon
  • 1.0c Sour cream
  • 1/4c Milk
  • 4.0Tbsp Butter
  • 1/2tsp Salt
  • 1/2tsp Pepper
  • 1.0c Shredded Cheddar cheese
  • 8.0 Green onions, sliced
