How to cook turkish bride soup
Given to the bride the night before her wedding. There are many legends around the name of this soup. it is a delicious,hearty & healthy dish. the association of lentils and bulgar is a high protein

INGREDIENTS
Heat oil sweat the onion carrot celery. Then add garlic cumin seeds paprika, chili flakes , tomato and tomato paste. Cook for 5 mins. Add the lentil and bulgur. Stir to coat the grains. Add stock.
In a food processor put onion, garlic, carrot, celery.
Few pulses
Put in a cooking pot with 2 TBsp olive oil. Sweat. Add spices, tomato paste and the fresh tomato(peeled). Cook for 5 mins. Add boiling water. Cook 20 mins add the lentil and bulgur. Cook until soft.
I prepare the plates with mint leaves. And I serve
- 2.0Tbsp Olive oil
- 1.0tsp Onion
- 1.0 Carrot
- 1.0 Celery stalk
- 2.0 Garlic cloves
- 1.0tsp Cumin seeds
- Chili flakes
- 1.0tsp Paprika
- Black pepper
- 1.0Tbsp Tomato paste
- 1.0 Tomato
- 0.0tsp Dry mint
- 1.0c Red lentils
- 0.0c Bulgur
- Vegetable stock or water
- Lemon to finish and lemon wedges
- Fresh mint for garnish
- Sumac
