Heat oil sweat the onion carrot celery. Then add garlic cumin seeds paprika, chili flakes , tomato and tomato paste. Cook for 5 mins. Add the lentil and bulgur. Stir to coat the grains. Add stock.
In a food processor put onion, garlic, carrot, celery.
Few pulses
Put in a cooking pot with 2 TBsp olive oil. Sweat. Add spices, tomato paste and the fresh tomato(peeled). Cook for 5 mins. Add boiling water. Cook 20 mins add the lentil and bulgur. Cook until soft.
I prepare the plates with mint leaves. And I serve
