What bacon shortage?! Of course you don't have to use bacon and pancetta and prosciutto...but hey, if the #aporkalypse is coming, we may as well indulge now!

Brussel Sprouts still on the stalk from North Gower Farmer's Market.  Strip and trim each to the edible parts.

Once cleaned, trim even further - setting aside outside leaves.  We're going to use these.

Cut the larger sprouts in half.  Blanch them for just a few minutes in water.

Chop bacon.

Finely chop garlic.  Add these to the bacon and pancetta - cook for a minute or two.  Careful not to burn.

Add the Brussel sprouts and leaves to the pan and mix just to coat.  Roast for 30 minutes at 400 degrees.
