Cook Three Berry Muffins With Streusel Topping

INGREDIENTS
First. Preheat oven to 375
1 cup each: strawberries, raspberries and blueberries. I like to add a little more than that
In a bowl mix: 3 1/2 c flour, 1 TB baking powder, 1/2tsp b soda, 1/2 tsp salt and 3TB cinnamon
Place berries in the flour mixture
Toss gently and coat berries. This will help them not sink to bottom of muffin while baking
In a separate dish, melt 2 sticks butter. Add 1 1/4 c milk and 2 eggs. 1 TB vanilla. Mix well
Mix gently just until blended, then add 1 1/2 cups sugar
Large scoops into the muffin tins.
Yields about 32 muffins
In a food processor add: 1 1/2 stick cold butter, 2 c flour, 3/4 c dark brown sugar (could use light as well) 1 cup oats and pinch of cinnamon and salt. Blend until looks coarse
To that add an egg and 2 tsp vanilla. It will look like this and come together nicely
Big handfuls, top your muffins. I used all the topping on 32 muffins but this topping freezes well if you chose to do half and half. The topping is wonderful on apple crisp or any muffin
Bake, about 20 minutes
And serve
I use a little pat of honey butter on mine. Enjoy x
