Start by rendering bacon, cold pan and low heat and render fat, the bacon will foam when finished Then set aside bacon bits.
With bacon fat cook onions till soft
Once onions are soft add carrots and celery, cook for 3- 5 mins then add potatoes!!
Add chicken broth and reduce
Finally add cream! And reduce! Salt and pepper to taste.
It is done when potatoes are fork tender! Serve with the bacon you reserved! Enjoy!!!
- 6.0c Potato fine chop
- 1.0c Onion
- 1.0c Celery
- 1.0c Carrot
- 4.0 Bacon strips
- 1.0qt Chicken stock
- 1.0qt Heavy cream
- Salt and pepper
