Gather your ingredients
Pint the mint leaves off the stems discard those
Medium dice the eggplant
Medium dice the onion
Grate the cucumber
Heat two teaspoons of olive oil on medium high
Add the onion and eggplant- season with salt and pepper cook for 3- 5 min or until softened
Add the lentil spice blend
Add the lentils and 3 cups of water
Finely chop half of the mint and add it to half a cup of yogurt and the cucumber
My them all together- then add half to the lentil broth
Cook the chicken and spice with a tandoori spice blend
Slice chicken once cooked plate your meal and enjoy
