INGREDIENTS
Cut lamb into 2cm cubes and fry in oil or butter
Cut onions into the same sized pieces
Also carrots
Mushrooms and leeks
When the meat starts turning brown add the onions
Until they start to become clear
Next add the carrots and fry for a few more minutes
Then add the rest of the vegetables
Toss them until they are all coated in juices
Dissolve the stock cube in a 1/2 pint of boiling water
Add this to the stew along with a heaped teaspoon of paprika
A good squirt of tomato purée
And a dash of Worcestershire sauce
Cover and leave to simmer
Put on some potatoes to boil
When the potatoes are cooked (20 minutes or so)
Mix a few teaspoons of plain flour or cornflour in a little water
Add slowly to the stew until there is enough to thicken the juice
Mash the potatoes (a little butter and milk make them nicer)
Serve the stew with mashed potatoes on the side.
- 1/2lb Stewing lamb
- 2.0 Onions
- 2.0 Carrots
- 1.0 Leek
- 3.0 Large mushrooms
- 1.0 Lamb stock cube
- 1.0tsp Paprika
- 1.0 Dessertspoon tomato puree
- 1.0 Dash Worcestershire sauce
- 1.0lb Potatoes
- Flour or cornflour for thickening
