Add fresh spinach, now get ready to roll this baby up! Notice the twine in this picture. My local big y meat department gives it to me for free! :)

Roll it nice and tight. Tie the twine. Rub some salt, pepper, and garlic on meat. I also add a little water to the pan so it doesn't burn the glass pan. (Lightly coat pan with nonstick spray)

Place in 375 degree oven for about 40 minutes. Make sure internal temp reaches 145.

Slice the pork loin and there you go! A beautiful dinner with four main ingredients!
