INGREDIENTS
Pre heat the oven at 375 degrees Fahrenheit .
Boil water with salt and cook the jumbo pasta shells. Drain and keep them aside.
For the stuffing :- Heat olive oil in a non stick pan On a medium high flame. Add chopped onions and sauté it.
Once the onions turn translucent add chopped jalapeño and yellow peppers. Cook for 3 mins. Do not over cook them. ( TIP:- if you want it more hot substitute jalapeño with Thai or Serrano peppers)
Add chopped garlic, salt and pepper. Mix well
Next add chopped spinach and cook for a few mins.
This is how it looks once spinach is cooked. Transfer this in a mixing bowl and let it cool for sometime.
Add ricotta cheese and a little bit of salt.
Mix well.
Next Add Parmesan cheese and mix. The stuffing is ready :)
In a baking dish spread some arrabiata sauce. ( any store bought sauce is good. Here I have used trader joes arrabiata sauce)
Next take cooked pasta shells and stuff them with the spinach ricotta stuffing and arrange them on the baking dish.
Next spread some arrabiata on the shells.
Sprinkle Parmesan cheese and cover with aluminum foil.
Place in a pre heated oven at 375 degrees for 25-30 minutes and bake. Next remove the foil and broil for two minutes until the cheese melts and turns golden brown in color.
Enjoy the dish with a side of roasted asparagus and a glass of wine :))

- 1.0 Onion
- 1.0Tbsp Olive oil
