Preheat oven to 180 degrees
Place couscous in bowl and cover with water about 1cm extra water on top off the couscous
Couscous should puff up as so
Cut the capsicums in half and deseed
Cut up finely Parsely, Chives, Red onion, Tomatoes, mushrooms and add currant and cranberries and mix
Scoop couscous onto capsicum and place on tray cool for 20-25 minutes
Place in oven on 180 degrees fan forced
Enjoy serve with natural yoghurt optional
