Dice the potatoes to 1 inch cubes

Boil some water in a pot. When it reaches boiling point- add the potatoes and turn the flame to a simmer. Cook until the potato is just tender. Drain & keep aside

Heat the vegetable oil. Add chopped garlic & sauté at low heat.

Add mustard seeds & whole dried chilli. Increase the heat& The mustard will start to crackle

Now add the turmeric, asafetida & chopped dill.

Add the par cooked potatoes and salt. Try not to add any water to the dish.

Stir well and cook till potato is cooked though. Serve it hot as a side dish.
