Cook Stir Fried Seafood With Curry (Thai Dish)

INGREDIENTS
Rinse soft shell crabs and put iin a small pan
Add sea salt and warm water to clean the crab and reduce the odor.
Pat dry and fry them on high heat on both side
It should turn orange and smells nice.
Thinly slice the onion and separate with fingers.
Slice chili
Add soy sauce, oyster sauce, chili paste, curry powder in to the egg. (if use, add evaporated milk) i would suggest that you do, it adds tons of flavor. I don't coz i'm allergic to milk.
Mix well, but try not to make any bubble, we don't need any air pocket here. Just make sure everything is well combined and the chili paste dissolves.
Chop the chinese celery roughly.
Sweat the onion and chilli until onion browns a little.
Add clams
Cut up crabs into small pieces
Add to the pan and stir fry until clams are cooked
Add the egg mixture
Quickly stir until half cooked then add celery and spring onion(if use). If it looks a bit dry add a bit of water. The dish should looks a bit runny.
Serve with rice and enjoy!

- 1/4 Onion
- 2.0 Spring onions (optional)
- 200.0g Soft-shell crab
- 1/2c Clams without shell
- 1.0 Large egg
- 1/3c Evaporated milk (optional)
- 1.0Tbsp Soy sauce
- 1.0Tbsp Oyster sauce
- 2.0Tbsp Chili paste
- 2.0tsp Curry powder
- 2.0bnch Chinese celery
- Oil
- 2.0 Garlic (optional)
- 3.0 Chili (optional)
