take steak out of packaging rinse and pat dry

season liberally with salt & pepper (optional) place a few drops of oil onto meat and spread across

put on a pan or griddle that's already hot cook 2-4 minutes each side, depending on the thickness

either pick up cast iron griddle and place in oven on high heat OR put on a wite rack and tray and place in oven

cook for 4-7 minutes take out and allow to rest for 5 minutes (do not skip this step!)

serve!
