I don't make breakfast often, but here is my take in steak and eggs... Steak with poached eggs and béarnaise sauce and crispy leeks

Get your choice of steak I used a flat iron about 8 oz each

Turn on broiler and Rub with seasoning set aside

While broiler is heating add sheet pan to preheat that as well. Once hot, add steak, cook about 8-10 min turning once. Let rest 10 min and slice, against grain! This came out medium

You can use white wine vinegar, I had this on hand

Add 1/2 cup vinegar 1 tablespoon tarragon and 2 tablespoons shallot to a pan on medium and reduce to half or less the liquid... About 5-8 minutes remove from heat and set aside to cool

Get a pot with water on and boil. Once boiled turn heat to medium/low and add another bowl on of pot, creating a double boiler
