I don't make breakfast often, but here is my take in steak and eggs... Steak with poached eggs and béarnaise sauce and crispy leeks
Add vinegar and Get 6 cups water boiling
You can use white vinegar but I had this on hand and worked well, the vinegar helps the eggs congeal and hold together while poaching
Get your favorite steak seasoning, I usually use webers
Get your choice of steak I used a flat iron about 8 oz each
Turn on broiler and Rub with seasoning set aside
While broiler is heating add sheet pan to preheat that as well. Once hot, add steak, cook about 8-10 min turning once. Let rest 10 min and slice, against grain! This came out medium
Take shallot and mince to two tablespoons

You can use white wine vinegar, I had this on hand
Add 1/2 cup vinegar 1 tablespoon tarragon and 2 tablespoons shallot to a pan on medium and reduce to half or less the liquid... About 5-8 minutes remove from heat and set aside to cool
After it cools strain the solids and add it to a bowl
Separate egg yolks
Add them and 1 tablespoon water to bowl and whisk 3-4 min
Until it looks pale yellow. Then add melted butter slowly and whisk 4-5 minutes. You can use a hand mixer to make it easy on you! After butter is incorporated add lemon juice, salt and pepper, whisk
Get a pot with water on and boil. Once boiled turn heat to medium/low and add another bowl on of pot, creating a double boiler
Like so. Then add sauce mix and whisk it will thicken after a few mimutes
It's starting to thicken and will continue the longer in the heat, but continue to whisk
Add olive oil to pot and get hot
Add shallots and fry 5 min or do until crispy and drain on plate with paper towel
To poach eggs bring water and vinegar to boil, add eggs, first crack them into a bowl and add to water, don't crack into water, they will break Once in remove from heat, cover and let cook 4-5 minutes

- Leeks chopped
- 2 egg yolks
- 1/2 cup white wine or white balsamic vinegar

- 1 tablespoon water
- 1 teaspoon dry tarragon

- 1stick butter melted
- 1/2 teaspoon fresh lemon juice
- Steak of your choice, I used flat iron about 8 oz
- Steak seasoning
