Take one and half cup of tapioca (you can usually find it in the baking section of grocery store, do not use instant tapioca). I got mine from a nearby indian store.

Gently wash then soak tapioca in about 1/2 cup water for 4-6 hours. Do not add more water or it will become mushy. Water should be just the same level as tapioca. Cover it.

After 4 hours. Tapioca has absorbed all the water. You can soak it overnight too if you want to eat it as a breakfast.

Add cumin seeds once oil is hot. Let it splutter for few seconds.

Add few curry leaves. You can skip it if you want, but it enhances the flavor so check your local indian store.

Mix it gently, stir fry for 3-4 mins on medium heat or until tapioca becomes translucent (like pearls). Keep stirring continuosly as it sticks to the bottom.
