lemongrass provides a zesty lemon flavor and aroma, together with chili sauce, ginger,garlic and lime juice is absolutely tasty and healthy!
Put ginger and garlic into food processor and make your job easy! I used 1 small ginger and 4 cloves of garlic.
Mixed fish sauce, chili sauce, ginger, garlic, lemongrass, sugar and lime juice all together.
Marinated for 1 hour, I try not to keep in for too long because I am using a extra hot chili sauce, and hopefully the chicken won't be too spicy! The smells already making me hungry.
Place chicken in a shallow grass baking dish. Combine remaining ingredients and pour over. As usual, I love to bake with potatoes, zucchini, yellow squash, green bean and mushroom. Optional
Preheat oven 180° Bake until chicken is cooked through and golden. Constantly check if it cooked, potatoes and green beans takes long time to cook.
I cook about 63 minutes but the chicken is nearly cooked, so I have to redo a preheat 375° and put the chicken in for another 10 minutes or more. The second time I tried 375° for 46 minutes.
It is very easy to make and it has a pleasant taste! I added some spaghetti too! for my delightful lunch!

- 2.0 Boneless chicken
- 1/2tsp Finely grated lemon grass
- 1/4c Extra hot chili sauce
- 1/4c Water
- 1.0Tbsp Fish sauce
- 1.0 Limes, finely grated zest & juice
- 1/2Tbsp Minced fresh ginger
- 2.0Tbsp Cloves garlic, crushed
- 1/2tsp Sugar
- 2.0 Small Potatoes
- 1.0 Zucchini and yellow squash
- 5.0 Mushroom
