INGREDIENTS
Gather your supplies
Chop the bacon
And separate it into a teflon or frying pot
Chop the onion
Chop or crush the garlic
And wait for the bacon to look just right
Get your parmesan
And grate it! I have a fancy grater, but you can use any kind
Get your eggs - I use pasteurized, but if you don't worry about salmonella, you can use fresh
Mix it in with the cheese
Add the cream (organic - 38 % fat) and fresh ground pepper
Mix and let sit while the rest is prepared
Start frying the bacon
When it starts to look brown like this...
Add the onion and garlic
Boil the pasta in plenty of salted water
When the bacon and onion are brown and delicious like this - add the white wine and turn of the heat
Wash the parsley
And chop it - I just put it in a cup and cut into it with a scissor
The bacon schould now be looking like this
And the pasta should be ready, so strain it...
Put it back into the pot and add the bacon mix
Stir and add the cheese mix
Stir again, let the cheese melt for 30 seconds and stir a final time
Your spaghetti alla carbonara is now ready :) Top with parsley and enjoy :)
- 400.0g Spaghetti
- 350.0g Bacon
- 170.0g Parmesan cheese
- 1.0g Red onion
- 5.0g Garlic clove
- 65.0ml White wine
- 4.0ml Egg yolk
- Pepper
- Salt
- Parsley
- 150.0ml Cream 38%
