Gather your ingredients

Thinly cut the scallions divide into white bottoms and green tops

Medium dice the zucchini

Grate the cheese

Half the tomatoes

Take the corn off the cob

Add the corn to the boiling grits

Add lemon zest to the grits

Add half the butter

And half the cheese

While the grits cook - in a large pan add the spiced shrimp - cook flipping occasionally 2- 4 min - transfer to a plate wipe out the pan

Add the garlic, scallions and a seasoning of salt

Add the zucchini and cook till soft

Add the tomatoes remaining butter the juice of all for lemon wedges and all but a small section of scallions

Add the prawns back into the mix
