Gather your ingredients
Peel the garlic cloves
Half the tomato lengthwise
Cut and discard the stems seeds and ribs - quarter lengthwise
Cut the potatoes into bite sized pieces
Finely chop the pistachios
Place the garlic tomatoes and bell pepper on one side of a sheet pan - place the potatoes on the other half drizzle with olive oil salt and pepper and the rest of the paprika seasoning 22-24 min
Plate and serve
