STEPS
INGREDIENTS
Chop the onion and add it to a pan with some olive oil and a splash of water
Rinse and pick all the herbs, the quantity I listed is just indicative, add as much as you want
Chop the herbs finely and the chilly
Add them to the pan ad the onion becomes translucent
After sautéing the herbs and onion for few minutes, add the chopped bell pepper, I used half yellow and half green, totally up to you
Sauté the peppers for 5-10min, add some water as they dry. Then stir in the passata
Lower the heat and cook throughout for about 5-10min. Add salt and pepper to taste
Separately cook the rice, I am using organic brown basmati, but you can use whatever you want or just the variety of rice you have around the house. Just cook it until it's undercooked and stir it in
Turn off the heat, add some olive oil and sauté everything together
Enjoy!
