INGREDIENTS
To cook this dish, first remove 2 egg yolks from 2 salted eggs.
Steam the egg yolks until cooked.
Mash the cooked egg yolks in a bowl while still hot.
Minced 200g meat.
Prepare ingredients for egg mixture: 1 large egg, 1/4 tsp salt, 1/2 TBsp cornflour,1/4 tsp sesame oil,1/2 cup water,dash of pepper and mashed egg yolks.
Add beaten egg into a measuring cup filled with the 1/2 cup water. Mix in the seasonings. Next add the mashed salted egg yolks.
Stir everything together. Mix well.
Prepare the steamer to steam the tofu. Heat up water in a wok till boiling.
While waiting for steamer to be ready, place a block of tofu onto a steaming plate.
Pour the egg mixture over the tofu.
Place the plate of tofu in the steamer.
Steam using high heat until tofu with egg mixture is cooked, about 8 minutes. (Do check for doneness when about cooked).
While tofu is in the steamer, prepare ingredients for the toppings. Mince 200g meat, 1 TBsp oyster sauce. 1/2 TBsp soy sauce, 1/2 tsp sugar, 1 tsp garlic and dash of pepper.
Then heat up oil in a wok. Sauté chopped garlic until fragrant.
Add in the minced meat. Stir fry until aromatic.
Add the seasonings: oyster sauce, soy sauce, sugar and pepper. Stir fry and mix well.
Spoon the cooked meat over the steamed tofu. Garnish with chopped spring onions and fried shallots before serving.
And you're done! A fuss free dish which compliments well with a bowl of steamed fluffy white rice. Enjoy.
- 2.0 Salted egg yolk, steamed and mashed
- 1.0 Tofu
- 1.0 Egg, lightly beaten
- 1.0Tbsp Vegetable oil
- 1.0tsp Garlic
- 200.0g Meat, minced
