Then place your salmon fillets in a grease proof paper or tin foil lined baking tray

Spread a good layer of pesto over salmon fillet (I use sundried tomato pesto but if you have a favourite it should still taste just as good!)

Repeat on other fillet ensuring both a similar thickness

Sprinkle breadcrumbs over the top of the prepared fillets - I don't over do this, just a thin layer. *You could always add a little Parmesan cheese for an extra kick*

Place in the oven and put the timer on for 15 minutes (mine usually take this time - but use this as a guideline as sometimes need 5 minutes more)

Once time is up and you can see the salmon is cooked, take out from the oven
