Mix one tablespoon of oil with one tablespoon of coconut milk until the aromas are released then mix with the red Thai paste until the aromas are released

Mix one tablespoon of oil with one tablespoon of coconut milk until the aromas are released then mix with the red Thai paste until the aromas are released

Add the meat to the paste making sure it is covered with the paste. I have added some onions, peppers and baby corn. Once the meat has cooked add the rest of the coconut milk and kaffir leaves

Finally serve immediately with sticky rice or fried rice, quick and easy. Sometimes tastes nicer the next day when all the flavours have settled.
