Wash all the vegetables and do not forget the secret ingredient... Love!
Cut the onion longitudinally.
Add some olive oil to the pan (with a cover) on a low fire. It is very important as it will cook for a total of 1 hr and high fire will burn the veggies...
Add the onions to the pan and cover for 5 min.
During that time dice the potatoes (I called it my way because there is no potatoes, and vegetables should be pan fried before in ratatouille, not because Franck Sinatra gave me the recipe :-))
Add the potatoes to the pan, mix and cover for 10 min.
During that time dice the green zucchini...
Do the same with the yellow zucchini....
And with the eggplant... Do not hesitate to make large pieces as it reduces a lot during cooking...
Add the green and yellow zucchini as well as the eggplant, mix well and cover for 10 min...
During that time remove the seeds from the yellow and orange peppers and dice them...
Add the peppers, mix well. Add the thyme and season with salt and pepper to your taste before covering for another 15 min...
During that time dice the tomatoes...
Add to the pan, mix well, and cover for a final 10 min...
It is ready and colorful!!
Serve with your choice of meat... Here it is presented with chicken my way :-)

- 3.0 Potatoes
- 1.0 Yellow zuchini
- 1.0 Green zuchini
- 1.0 Eggplant
- 1.0 Orange pepper
- 1.0 Yellow pepper
- 4.0 Tomatoes
- Olive oil
