We are preparing, 2 different types of topping, mushrooms and chicharon, 👍

Slice the mushrooms,cook them in a hot pan, whit onion and epazote, (Mexican herb) you can find it in a food city, season it whit salt

To make the adobo, get some dry chilies ( guajillo) onion, garlic, let it cook whit water, once it's cook, blend it and put it back in the pan, add the chicharon, vinegar and oregano, season it

Get the corn dough, in a bowl, add some salt, water, and lard, mix it, until you get a soft-sticky texture

Now we have ready everything, (don't forget to shred the cheese), on top of the tortilla put the cheese and the topping of your choice, let the cheese melt.

Quesadillas are ready, top them whit salsa, sour cream and whatever you want hope you like it 😄
- 3/4lb Chicharron
- 1.0kg Corn dough
- 1/4kg Mushrooms
- 1/2kg Oaxaca cheese
- 1/8kg Lard
- 1/6kg Adobo it's made of guajillo chilies (paste)
- Salt & pepper
- Oregano
- 1.0oz Vinegar
